You can make some cookies for your friends too. Write a little message about why they are important to you and just spread the joy.
Lucky Fortune Cookies Recipe
- 2 egg whites (extra large eggs)
- ½ tsp vanilla extract
- ½ cup all purpose flour
- ½ cup sugar
- pinch of sea salt
- handwritten fortune messages
- 1 cup chocolate chips (optional)
- St. Patrick’s Day sprinkles, for garnish (optional)
Write out fortunes and cut them into strips (they need to be about 3″ by ¼”). Fold them in half if they are really long. Preheat the oven to 350 degrees. Line a cookie sheet tray with silicone baking mats or parchment paper.
In a large bowl, whisk together the egg whites, vanilla extract, flour, pinch of sea salt and sugar. The batter will be very loose,
Using a small spoon, scoop about 1 tsp of batter onto the lined cookie sheet. Use the back of the spoon to smooth the batter into a very thin circular layer. Repeat this process with additional batter to form two or three circles of batter on the cookie sheet. Bake the cookies for 5 to 7 minutes, or until the edges of the cookies begin to brown.
Remove the cookies from the oven and place the handwritten message in the center of the each cookie. After that use a flat spatula to very carefully release the cookie from the sheet tray. Fold it in a half, then pinch the edges inward to create the fortune cookie shape. Continue this process with the remaining cookies, which will harden within 30 seconds of being formed.
Place each cookie into a cupcake tin laying down so it will hold it’s shape while it cools. It should cool about 15 minutes.
As an optional garnish, melt the chocolate chips in the microwave in 20-second intervals then dunk the hardened and cooled cookies into the chocolate. Immediately decorate the chocolate dipped cookies with St. Patrick’s Day sprinkles and let harden.
