
Sometimes you just need a quick, healthy meal that you can throw together really easily. Besides providing us with incredible rich flavor and high-quality protein, salmon has many healthy benefits. Full of vitamins and minerals (potassium, selenium and vitamin B 12), it’s the amount of omega-3 fatty acids that gives salmon it’s “brain food” reputation. It’s also a very versatile recipe, you can use other veggies that need using up. Salmon is also rich in DHA and EPA which helps to increase the “good” cholesterol that you want helping to clean your arteries, and improve circulation to your heart. It also helps to reduce inflammation, regulate blood pressure and reduce the risk of blood clots. Oven works it’s magic in 15-20 minutes and the olive oil, lemon juice and seasonings blend together into a seriously delicious juice/sauce/concoction that you should really drizzle over all the things.
Herbs and Seasonings To Add
- Try adding herbs such as dill, tarragon, cilantro, basil, thyme or parsley
- Drizzle with a little honey for added sweetness, if you like
- Try adding red pepper flakes for a nice kick and some fresh tomatoes
- You could replace the lemon slices with oranges or limes
Baked Salmon With Asparagus Recipe
Ingredients:
- 4-6 salmon fillets
- 1 bunch thin-medium width asparagus, ends trimmed
- Olive oil
- 1-2 lemons (the juice from one lemon and the other lemon to cut into rounds for garnish)
- Kosher salt
- Ground black pepper
- Garlic powder
- Dill, thyme chopped if using fresh
- 1/3 cup beans/peas or any other greens
Preparation:
Preheat the oven to 375 degrees. Drizzle a little olive oil on the bottom of a sheet pan. Line salmon up in the center of the pan. If there’s skin, place the skin side down. Place the asparagus and greens around the outside of the salmon, down the sides of the pan. Lightly drizzle some olive oil onto the fish and asparagus. Squeeze the lemon juice over the salmon and asparagus. Sprinkle the salmon and asparagus with salt, pepper, garlic powder and dill to taste. Place a lemon rounds onto the top of each piece of fish. Bake for 15-20 minutes or until the internal temperature is 145 degrees and the asparagus is cooked through. Serve immediately with extra lemons and beans/peas on the side.
