Chocolate crinkle cookies are indulgent little treats that are actually really simple to make. They are soft, tender, and just a little bit chewy. Something like a brownie but in cookie form, in other words these cookies are sure to satisfy.
Chocolate Crinkle Cookies Recipe
- 1 cup all purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- pinch of salt
- ½ cup granulated sugar
- ¼ cup brown sugar
- 4 tsp unsalted butter (softened)
- 2 eggs
- 1 tsp vanilla extract
- ½ cup cocoa powder
- ⅓ cup powdered sugar for coating the cookies
In a medium sized dish combine flour, cocoa powder, baking powder, baking soda and salt.
In a large bowl mix butter and sugar, using electric mixer, at the lowest speed for a minute, then at medium speed for two more minutes. Add eggs one at a time and mix until it becomes light and creamy. Add vanilla extract and mix some more.
After that, add dry ingredients from medium sized dish and mix using electric mixer at the lowest speed, until you get fine dough. Shape it into a ball and wrap it in plastic foil. Leave it to rest in fridge for at least 3 hours, possibly overnight.
Preheat the oven to 375 F. Line baking pan with parchment paper and leave aside. Take the dough out of the fridge and make 1 inch balls, with your hands. Roll the balls in powdered sugar, so that the whole ball is covered in it. Place them into the baking pan.
Make sure to leave 2 inch space between the balls. Bake the cookies for 10 minutes. Let them to rest a minute or two before transferring to a wire rack to cool completely.
