Perfect for before or after a workout. The ingredients are simple but together totally amazing. Dates, almonds, dried cranberries, ginger, chia seeds, oats, shredded coconut and carob powder.
Carob (Ceratonia siliqua) is the fruit of the carob tree and grows as long, slightly curved, thick, dark brown pods anywhere from 4-10 inches (10-25 cm) in length. Raw carob is subtly sweet and not at all bitter with a pleasant almost caramel-like taste. And, unlike the cacao bean, it doesn’t require as much sweetener when used in traditionally prepared carob desserts like fudge, puddings, drinks, pies or cookies. Carob has not only proven to be a great substitute for cocoa, but carob powder has it own merits and reasons to be a worthy to your kitchen.
Keto Cranberry Almond Energy Bites Recipe
- 8.5 oz medjool dates (pits removed)
- 4.9 oz raw almonds (chopped)
- 2.5 oz dried cranberries (unsweetened)
- 1 tsp ginger powder
- 1 tbsp chia seeds (optional)
- 4 tbsp gluten-free oats
- shredded (unsweetened) coconut and carob powder
In a high speed blender or food processor place all the ingredients and blend or pulse until everything starts to come together.
With wet hands (makes the rolling process easier), roll the mixture into about 1 1/2 inch balls. You should get about 23 bites out of the mixture. Dip every ball in the shredded coconut or carob powder.
Refrigerate for 20 minutes!
Keep your leftover energy bites in an airtight container in the refrigerator or freezer for up to 1 week.
