Quick & Easy Keto Banana Bread Recipe
- 1 ripe banana, mashed (you can add more (up to 3) depending on your diet restrictions)
- 3 large eggs
- 2 cups almond flour
- 1/3 cup chopped walnuts (optional)
- 1/4 cup olive oil
- 1 tsp baking soda
- 2 grams stevia
- 1/2 tsp sea salt
- coconut oil for spraying the pan
Preheat the oven at 350 F.
In a medium bowl, mix together all your dry ingredients (almond flour, chopped walnuts, baking soda, stevia and sea salt) then set aside. Add all wet ingredients (eggs, olive oil and mashed ripe banana) into a blender or food processor and mix till batter is well blended. Add dry ingredients to the blender or food processor and mix well until a nice smooth batter is formed. Pour your batter into a well greased 9 x 5 inch loaf pan.
Bake for 55 minutes or until the top is brown (after 25-30 minutes of baking you can cover the bread with tin foil to ensure it doesn’t become too dark). Use a tester or a toothpick, if it comes out clean then it’s cooked. Turn off the oven and allow your bread to sit in the hot oven for at least 10 minutes. Allow your banana bread to cool for 30 minutes to an hour.
