This colorful hummus is made with chickpeas, red beet, tahini, olive oil, lemon, and garlic. The beet hummus tastes just as delicious as regular hummus. However, the addition of a beet puree deepens an amazing gentle taste and flavor. Beets not only add a bright color to the hummus but they also add a big punch of nutrition. Super Creamy Vegan Beet Hummus Recipe
- 1/2 cup chopped cooked beets (boiled or steamed)
- 1 cup cooked chickpeas
- 2 cloves garlic
- 1 tbsp tahini
- 2 tbsp lemon juice
- pinch of sea salt
- 1/4 tsp ground black pepper
- 1-2 tbsp water
- 2 tbsp extra virgin olive oil, to garnish (optional)
In a food processor, add first 7 ingredients and combine until smooth. In order to create a very smooth and creamy hummus, you may need to add a little water. Once you have pureed the hummus, check the consistency, add 1 or 2 tablespoons of water a little at a time until you reach the desired consistency.
Serve in a bowl, add olive oil and sprinkle with chopped parsley.
